Mini Hamburgers Dinner time

Mini Hamburgers/Cheeseburgers w/ homemade mini buns!
:) yumhttp://southernfood.about.com/od/appetizerbreads/r/bl61210h.htm

Ingredients:

  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 large egg
  • 3 1/4 cups flour
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1 scant tablespoon active dry yeast

Preparation:

In a bowl or large cup, whisk together the milk, melted butter, and egg. Place the milk mixture, flour, sugar, 1 teaspoon salt, and yeast in the bread machine in the order suggested by your bread machine manufacturer. Run on dough cycle. Remove finished dough to a lightly floured surface. Roll half of the dough to about 1/4-inch thickness or slightly more. Cut out with a 1 1/2-inch cutter. You could make your sandwiches slightly larger using a 2-inch cutter. Picture I Picture II

Place cut-outs on a large greased baking sheet. Bake at 350° for 15 to 18 minutes, or until browned. Brush tops with a little butter while they're hot. Let cool on rack. Split the cooled buns and fill as desired.

Cleaning the giant desk of clutter & crap

The Cleaning and organizing of the computer room. Thanks Nena for this idea, I normally set aside time to clean the desk off, but only really the top part of the desk, not the whole thing. Doing the whole thing makes sense as the whole thing is filled with clutter and trash.
BEFORE picsDURING picsand AFTER pics (which there still needs to be some sort of organization of the wires and plugs, but I am saving that for Paul)

Corn Bread

mix together 1 Cup cornmeal
1 Cup flour
1/2 Cup sugar
4 teaspoons paking powder
1/2 teaspoon salt.. after this is all added mix before adding "wet" ingredients"
then add in 1 egg
1 Cup milk
1/4 Cup oil
Stir together but ONLY enough to combine ingredients, if you mix too much the corn bread will come out bad.
grease 8-9in round pan, or use cupcakes pan and use liners. add mixture makes 12.
bake 375 about 20 min for muffin tin, and 25min round pan,
or until edges are slightly brown.. the only thing I really make this for is the beans and rice, even though there are so many things we could eat it with.. but we CAN'T eat B & R without it, it is against "the rules" lol

Beans and Rice - Pinto Beans

Start with 1 or 2lbs of dry pinto beans (I used 2, as I like to have leftovers to freeze!)
wash and rinse a couple times, then let beans soak in water overnight. Drain in the morning.
take at least 3 cloves of garlic and mince/chop it into the beans. (I like to used alot of garlic probably 5 cloves)add in a little pepperadd in 3 Tablespoons chili powderadd approx 14oz of salt pork, I used sliced and broke up as I added itadd in one whole onion chopped, or if you have picky eaters cut in half for easy removal after cooking.add in 2 quarts of water
Stir ingredients
place crock pot on high and cook all day, ready for dinner.
last step I add in a sliced up sausage towards the end of the cooking.
cook up some rice, steamed or boiled, serve beans over rice.
season with salt to taste or garlic salt to taste.
YUMMM serve with cornbread recipe show in next post(coming soon)

Earth Day!!!

Happy Earth Day everyone!
There are a few stores out there running a special of a FREE reusable shopping back with purchase and or coupons, with % off in addition to getting a free bag.
These bags are GREAT for pretty much anything, esp your groceries. The thick lining makes it easier to fit and be able to hold more groceries than a plastic bag, the wide straps are designed to be carried on your shoulder and make carrying many groceries at a time, a cinch, and not painful at all.
Be sure to get out and get your free reusable bags, and do your part to be green!
oh and to help remind you to use them, after bringing in your groceries with them, either stack them on top of your purse or other item you use when you go to the car, or just bring them right back out to the car. Once you get into the habit it is very easy to remember, plus what a great habit!
Walgreens is offering a 15% off coupon, plus FREE reusable bag.
http://www.walgreens.com/dmi/onlineoffers/default.html?ban=flh1_earth_day
In celebration of Earth Day April 22 H-E-B will be providing customers with coupons for reusable bags in exchange for five plastic bags. From 3-7 p.m., customers can bring in plastic bags from any retailer to receive the coupon (one per person) while supplies last. The company plans to give away 300,000 reusable bags state-wide while recycling 1.5 million plastic bags.
Other ways to "go Green"
1.Recycle. if you dint have a community pick up, find out where your local center is and make regular drop offs. Also recycling your news papers are easy as well. Most schools have a a green and yellow paper recycling bins outside their school, which also benefits the school monetarily.
2. Use "green" products, that are safe for the environment.
3.Replace bulbs in you home with energy efficient ones.
4. Plant a tree or other vegetation.
there are many many other ways to go green... what other things can you think of?
